Cuisine
The local cuisine is marked by the wonderful local vegetable produce. Typical dishes include vegetable stews, “pocha” beans with quail, “ajoarriero” (local cod dish) with snails or crayfish, lamb “al chilindrón”, charcoal-grilled cutlets, roast peppers, lamb tripe, meat and potato stews, shepherd’s “migas” (crumbs). Wine (red, rosé). The most typical confectionary includes the biscuits from Murillo el Fruto and Pitillas, pastry cakes (Tafalla), caramelised almonds (Ujué), “turrón royo” (Artajona) and “leche frita”.
Wine is a local hallmark, not just due to the great number of private and cooperative wineries, but also because of the Wine Museum in Olite. The area is also home to Navarra's Grape Growing and Oenology Station, devoted to studying, experimenting and spreading techniques for vine growing and wine making.
